It was a cold winter snowed-in day in Boulder and this was perfect to warm me up! You can pick up a bag of frozen clam without the shells, so easy and delicious!
gluten free clam chowder

Gluten Free Clam Chowder

½ onion chopped
1 clove of garlic chopped
2 cups baby clams (no shells) with clam juice
1 cup Heavy cream
2 cups Milk( almond milk is what I used)
2 large potatoes or 3 small ones chopped
2 tsp tapioca flour
1 1/2 cups vegetables (corn, peas, carrots)
1/2 tsp Thyme
Salt/ pepper

  1. Saute onions and garlic under slightly browned.
  2. Add clams with its juice, heavy cream and milk.
  3. Stir, add spices and tapioca flour to thicken.
  4. Add potatoes and simmer for 45 min or until potatoes are cooked.
Here is a recipe to beat this cold weather. Its a cuban dish and it reminds me of the beaches in South Beach Miami.

Picadillo

1/2 onion chopped
1 tsp chopped garlic
olive oil
1 lb of ground organic beef
1 small can tomato sauce
2 tbsp BBQ sauce
1/4 cup chopped green olives with pimentos
handful of raisins
2 small tomatoes chopped
oregano or all purpose seasoning
1/4 tsp garlic powder

  1. Saute onions and garlic in olive oil, very lightly browned.
  2. Add beef and cook until browned.
  3. Add tomato sauce, BBQ sauce, olives and raisins. Salt and pepper to taste, slivered almonds optional.

This can be served over rice or quinoa. Traditionally, it is served over rice.
